375g(12oz) thinly sliced cooked Highland beef
175g (6oz) Cooked Pasta shapes
175g (6oz) Mangetout
1 small Red Onion peeled and thinly sliced
100g (4oz) Baby Spinach leaves
Salt & Pepper.
Dressing Ingredients :-
60ml (4tbsp) reduced fat Mayonnaise
60ml (4tbsp) Creme Fraiche (half fat)
45ml(3tbsp) Olive oil
30ml (2tbsp) chopped flat leaf Parsley
30ml (2tbsp) Lemon juice
50g (2oz) blue cheese crumbled (why not try Blue Wensleydale a little
milder than Stilton)
1. Prepare the Blue Cheese dressing by mixing all the ingredients
in a small bowl, cover and set aside.
2. Next place the cooked Pasta, Onion, Mangetout in a large salad
bowl and stir through the dressing. Add the Spinach and Highland beef
and lightly toss.
Serve straight away with fresh crusty bread.
